Ingredients and Variations
We are keeping it very simple here with just fresh zucchini, olive oil, and Montreal Steak Seasoning. If you don’t have Montreal Steak Seasoning you can make your own, or just sub in kosher salt, garlic powder, and black pepper.
Sometimes I add a little grated Parmesan or mozzarella in the last two minutes of cooking. If you’re looking for cheesy plant-based options, sprinkle the zucchini with 1/2 tsp of nutritional yeast before cooking.
You can also toss the zucchini in a bit of olive oil and then sprinkle panko breadcrumbs and garlic powder over the top. The garlic panko doesn’t make the zucchini itself crispy, but it does give the dish a nice little crunch.
