CAN Quiche BE FROZEN?
Yes, quiche can be frozen once it has fully cooled.
I tend to make two quiches at once; I’ll freeze one whole and one in slices. The whole quiche one can make an entire meal for the family or for gifting to some who might benefit from a homemade meal.
The frozen slices allow someone to grab just one or two for a quick meal without having to defrost an entire frozen quiche.

HOW TO Freeze Quiche
Fully bake the quiche before freezing. If you plan to freeze the quiche whole, it is ok if it is slightly undercooked. If freezing in slices, you’ll want the quiche cooked through and for the center to not have “jiggle” in it.
Prior to freezing, allow the quiche to fully cool in the fridge. This will prevent condensation from forming in the freezer, which can cause the quiche to become icy.
Freezing Quiche Whole
Wrap fully cooled whole quiche in foil and place it in a flat place in the freezer. The quiche will take 4-5 hours to fully freeze. Depending on the size of the pie pan, some whole quiches may fit in gallon-size freezer-proof bags.
Freezing Quiche in Slices
Fit parchment or waxed paper on a rimmed baking sheet. Place fully cooled quiche slices on the baking sheet and freeze for 2-3 hours in a flat place in the freezer.
Once the quiche slices have frozen solid, transfer them to a freezer-proof bag. Remove extra air from the bag to prevent freezer burn.
HOW TO REHEAT Frozen Quiche
To reheat a frozen whole quiche, you can place it in the fridge overnight or bake it frozen, straight from the freezer. It will take ~15 minutes to reheat a thawed quiche or 30-60 minutes to reheat a frozen quiche in a 350F oven.
Keep the quiche covered with foil while reheating it in the oven. This prevents the top from browning and overcooking during the reheating process.
Pro tip: if you plan to reheat a whole frozen quiche, use metal pie plates instead of ceramic. This prevents potential breakage from the drastic change in temperatures.
To reheat frozen quiche slices, you can place them in the fridge for a few hours, or bake them from frozen. A thawed quiche slice will take about 45 seconds in a microwave. A frozen quiche slice will take around 2-3 minutes in a microwave. Check the progress after 90 seconds.
Pro Tips/Recipe Notes
- Quiche made with full-fat milk or cream will freeze better than those made with low-fat milk products.
- Prior to freezing, allow the quiche to fully cool in the fridge. This will prevent condensation from forming in the freezer, which can cause the quiche to become icy.
- Some vegetables will become mushy when frozen and then reheated. A quiche that contains certain veggies like squash, asparagus, and mushrooms will still be delicious if reheated, but the vegetables may be watery.
